Pick NVMe when storage is the bottleneck
Large PostgreSQL or MySQL databases, Elasticsearch and OpenSearch, ClickHouse, build farms and video pipelines all spend real time waiting on disk. Moving them from SATA to NVMe often helps more than doubling the CPU.
For ordinary websites the jump is harder to notice; a SATA SSD server will usually do the job for less.
